Mayonnaise made from Solar Foods' Solein is a step on the product's commercialization path

Solar Foods' mayonnaise innovation is a concrete example of how Solein's unique product characteristics can create added value for customers. Innovations of this kind play a key role in strengthening customer interest in Solein.

Solar Foods showcases Solein's added value with new mayonnaise innovation

Solar Foods announced on Tuesday that it has developed a mayonnaise made from Solein protein and has filed a patent application for it. According to the release, Solein's emulsifying properties allow for approximately three times the amount of mayonnaise to be produced by replacing egg yolk powder with the same amount of Solein. From a production perspective, this enables a clear efficiency and cost advantage for the food industry, according to the company. In addition, replacing egg with Solein enables the production of vegan mayonnaise. According to Business Research Insights, the global mayonnaise market is approximately 13 billion US dollars, and the demand for vegan mayonnaise, in particular, is expected to grow significantly.

Solar Foods' press release is a concrete demonstration of Solein's versatility and its potential as a raw material in the food industry. The company has previously communicated Solein's unique functional properties, and the newly announced mayonnaise innovation is an example of how these properties can create unique added value for customers.

Solar Foods' mayonnaise innovation and the related patent application are concrete steps on the company's commercialization path. Such concrete, customer-attracting applications are key as the company seeks to conclude binding sales agreements for the capacity of the upcoming Factory 02.
